A pub without parmas? Sounds a little like an ocean without water, right? But for one hospo power couple, they’re hoping it’ll be the start of a new direction.
Presenting the Green Man’s Arms: a new vegan and vegetarian pub on Lygon St, from well-known artists Alison Whyte and Fred Whitlock. Alison and Fred have been in the game a long time, running The Terminus and Yarra Glen’s famous pub, the Yarra Valley Grand.
“While we loved the YV Grand, what most people wanted was a parma,” Fred says. “That doesn’t reflect what we as a family eat,” says Fred.
The couple set about plotting something new. A dedicated vegan/vegetarian pub in Melbourne’s north. A “friendly little place”, full of ethical produce, where you could also settle in with a pint and watch Sunday pass you by. Alison and Fred teamed up with young Israeli chef David Raziel to construct the menu. It was a tough ask: something vegan and veggo that still felt ‘pubby’.
The result is a smart little selection, built from seasonal ingredients. Little veggie-based alco bites like house-made falafel (a secret Jerusalem recipe, closely guarded by Raziel). Fluffy Yemeni lahuh bread, served with falafel, tahini, pickles and parsley. Stuff you can nibble while nursing a pale ale.
For mains, think grilled vegetable salad of beets, red cabbage, onions, almonds on labne and pita, drizzled with a pomegranate dressing. Or maybe house made cous cous with a vegetable stock and roasted pumpkin. Save some room for dessert: Raziel whips up a wicked halva ice cream with pistachios and pickled grapes.
The Green Man’s Arms owns all its own beer taps (a bit of a novelty these days), and they’re frothing a nice range of craft brews. Local microbreweries like Hawkers Pilsner, Stomping Ground Saison and Holgate Mt Macedon Pale Ale.
